*Whenever a Stalnox is holding an object, say a log or one of its own ribs, the eye will be unable to be removed from the body, no matter how much health the Stalnox has. In order to attack the eye again, go far enough away from the Stalnox so that it tries to throw whatever it is holding at you, meaning it is no longer holding anything, and then you will be able to remove the eye again.
*The Stalnox's eye can be separated from its body to prevent it from regenerating, and can be carried anywhere. If the eye makes it through the daylight without regenerating the skeleton, it won't disappear as long as Link is carrying it.

Stalnox are bosses that appear in Breath of the Wild, Age of Calamity, and Tears of the Kingdom.

Breath of the Wild
