Hudson is one of the men who Link meets in Hateno Village in Breath of the Wild. He is demolishing a house with Bolson and Karson.
When Link finishes the Hylian Homeowner sidequest, Hudson will move on to a project of his own in Akkala, where he builds Tarrey Town. This triggers a new sidequest, involving Link needing to find a Goron, Gerudo, Rito and Zora, as well as several bundles of wood before he asks Link to fetch Bolson and Karson from Hateno Village.
