Potions have all sorts of various effects on Link, usually restorative.

Potions

Regular potions. Potions can be bought from stores, and can be very expensive. Sometimes a skilled brewer will 'craft' them out of materials you find. Potions are very useful and can save Link from some pretty nasty situations. Very rarely you will find a way to have free potions, usually after completing some sort of side quest.


Lon Lon Milk

This stuff restores 3 hearts per drink, but there are two helpings inside for a total of 6 hearts, very useful near the beginning of the game when its just not worth it to get a red potion. Can be bought in shops, and in Ocarina, from Lon Lon Ranch.


Red Potion

Restores up to 8 of Links hearts, however the amounts can vary from game to game, being all of Links hearts, or six hearts.


Green Potion

Fully restores Links magic meter.


Blue Potion

This amazing stuff fully restores both Links magic and his hearts.


Super Potions

That's right, these things are that awesome. These potions do other neat things, besides just healing.


Grandma's Soup

In Wind Waker, after you return to Outset Island, you'll find that Grandma has fallen ill with worry. Releasing a fairy while standing next to her will revive her. Upon seeing you she'll be so happy that she'll cook up your favorite soup for you. This awesome stuff fully heals Link's hearts AND doubles his attack power for a short time! Although if hit, the doubled attack instantly goes away. On top of all that, she stuffed your bottle so full of the stuff, that there's two helpings of it in one bottle!

You can obtain Grandma's soup anytime after you heal her and talk to her with an empty bottle if you don't already have a bottle with some of her soup in it, wouldn't want to get greedy now would we?


Great Fairy's Tears

In Twilight Princess you obtain Great Fairy's Tears as a reward for various side quests, but there isnt much of this stuff around. It has the same effect as the Grandma's Soup in The Wind Waker, fully healing you and doubling attack power for a short while, or until damaged. But it only has one serving in it, not two.

This stuff is pretty rare, but if you manage to beat the entire Cave of Ordeals out in the Gerudo Desert, you'll be able to go to any Light Spirit spring and talk to a cloud there to refill your store of the stuff. Since you can obtain other drinks of this from side quests, its actually possible to have several of these in your inventory all at once, up to four or five potions of this effect, including the rare Chu Jellies.

Rare Chu Jelly

You can only find this in Twilight Princess. This stuff does the same exact thing as Great Fairy's Tears. When you kill these Chus and scoop their goo into a bottle that Chu will never appear again in that place. There are two, maybe three to be found in the whole game. Rare Chu's are a pale color and sparkle a bit.


Odd Stuff

This is the stuff that you should NOT put in Links bottle, I mean, this stuff is pretty nasty. Plus it might not heal, these things do random things at set rates, they range from heal one heart, 3 hearts, full heal, hurt one heart, hurt 3 hearts, or bring your health all the way down yo a quarter heart! These things tend to do more harm than good at said set rate, so you gotta be desperate to drink this stuff.


Poe

While poes are normally sold or released, you can choose to bottle a poe and consume it in Ocarina of Time to bestow one of the above mentioned effects. This can also be done in Majora's Mask.


Purple Chu Jelly

In Twilight Princess, chus come in several shades. There are red chus, yellow, blue and rare chus. Each chu does the same thing as the corresponding potion color. (With blue chus healing more than red, since there is no magic in Twilight Princess) Purple chu jelly, when scooped into a bottle and drunk, has one of the above effects on you.


Useful Non-Restorative Potions

In twilight princess you can store lantern oil inside a bottle to refill your lantern when it runs out of oil.
