The first time (and ONLY the first time) this amiibo is used, Epona will appear. It is strongly recommended to ride her to nearby stables and register her as quickly as possible. She has maximum stats in all categories. Be careful with her, as she CAN die, and you cannot use the amiibo to get her again. There is a Horse Fairy that will resurrect horses after they have died, but it is unknown if Epona is eligible for this type of resurrection.
