You can recover your horse every time by talking to the attendant at the stable, or if you have the [[Ancient Saddle]] equipped on your horse, you can summon it at your side to ride again.

Using [[Maag No'rah Shrine]] as a [[travel gate]], you can camp inside the cavern until the night and then paraglide closer to the canyon. Dinraal will appear in the night sky to the west at 12:00 AM, but won't arrive next to you until ~1:30 AM. You can then jump and then get close to the dragon to shoot whatever parts you need out of it.
