My favorite cartoon is and will always be Avatar: The Last Airbender (and by extension the Legend of Korra). I was (and still am) totally in love with the entire world they have set up, and the characters are some of the best I've ever seen.
Another more recent show that has captivated my interest is Adventure Time. At first I just thought it was funny and also had a really weird vibe to it. Now that I've learned the terrible dark secret of the origins of Ooo the show has revealed itself to have far more depth than what it initially seems. Can't stop watching it now.
