Ideally, Link's horse only has to gallop full speed just once to reach the goal before Blynne's record time, but approaching the obstacles at an odd angle may cause the horse to avoid them or rear, losing time. The optimal angle of approach for the obstacles is 90 degrees perpendicularly, so it's okay to accommodate for the correct angle with enough terrain for the horse to canter and clear the obstacles comfortably and unimpeded.
