I would go for one of the more recent ones, and work my way back. Nintendo has been making more "easier" games recently, and if you want to start out easy, go for Spirit Tracks or Wind Waker. (You should play Wind Waker before playing Phantom Hourglass, as it gives you more background.)
But it all depends on what kind of difficulty you want to go for. For easier, Spirit Tracks or Wind Waker. For a medium, go for Ocarina of Time or Majoria's Mask (Never played Majoria's Mask, though, so I'm just going with the gameplay I saw) or Twilight Princess. And for a more difficult game, go for Zelda II. (From what I hear, it's very difficult)
