Speak to Dalia in Gerudo Town to begin the quest.
Walkthrough
Right next to Dalia is a waterfall. Climb up beside it (you cannot climb while actually in the waterfall) and you will see melon rinds floating down the water source.
Trace these all the way back to their origin (pretty much straight west) and talk to the Gerudo eating melons there.
Next collect 10 Wildberries. They tend to grow in regions which require Cold Resistance Level 2.
Turn them in to Calyban, then return to Dalia to complete the quest for a Hydromelon.

Dalia planted the wildberries she received from Calyban and said that it's OK to pick them once they grow in.
With the source of the water pollution cleared up, all that's left to do is wait for the wildberries to grow.
