The mentioned method of farming Stealthfin trout works, but better still is to simply run west along the shoreline of Lake Mekar that's just north of the Rauru Hillside at night.
Teleport to the nearby Woodland Tower, glide over, and you're set. Once you reach around the Elma Knolls, teleport back to Woodland Tower and start again.
Overall, this way is faster (far fewer loading screens) and it rains frequently, which makes catching any fish a breeze.
((If running into the fog is a necessary component to resetting spawns, just swim towards the Lost Woods and it will set you back on the opposite shore))
