Poes are ghosts that can be quite a hazard to Link. They sometimes appear and disappear at will, making them difficult to defeat. Two notable Poes are Sharp and Flat.

Appearances

A Link to the Past

Poes are grim reaper-type enemies that only appear in the Graveyard. They are found in the Light World, flying around the various gravestones. They require many hits with a weapon to defeat.

If you stare at it with (Z)
Targeting, it will disappear...

In Ocarina of Time', Poes primarily appear in the Kakariko Village Graveyard. When Link targets a Poe, it will go invisible, showing only its floating lantern. The Poe will re-appear in timely intervals where Link can then attack it. Avoid targeting the Poe, as it will just keep going invisible. Instead, use your shield to defend, wait for a gap in its attacks, and then slash away.

Link is able to capture a defeated Poe in an empty bottle. He can either drink the Poe to regain minimal recovery hearts, or trade it to the Buyer or the Poe Collector.

While riding Epona in Hyrule Field, Link will encounter special Big Poes. These Poe's will only appear momentarily and Link must shoot them with two Arrow shots. They can be stored in empty bottles and brought over to the Ghost Shop. If Link is able to capture all ten Big Poes, he can earn himself a Bottle.

Poe? If you try to use Z
Targeting, it vanishes.

Poes don't appear as much in Majora's Mask, but are the same as in Ocarina of Time. Sharp and Flat appear in this game as well.

The Wind Waker

In The Wind Waker, Poes appear numerous times throughout the game. These ghosts can only be defeated by shining light on them and then hitting them with a weapon. Jalhalla, the boss of the Earth Temple, is actually an aggregation of Poes.

Twilight Princess

Main article: Imp Poe

Twilight Princess Poes are called Imp Poes and might seem more creepy. They are a collectible in the game and by turning in Poes to Jovani, Link receives various awards. Link must also kill four Big Poes in order to complete the Arbiter's Grounds.

Phantom Hourglass

In Phantom Hourglass, Poes can be found on the Ghost Ship. Their appearance is significantly different from Poes in prior games. Their only true attack is spitting a blue fireball towards Link.
