After being able to leave Ordon village you can go to South Faron Woods and talk to Coro the lantern salesman.  When he gives you the lantern he has you light the fire pot in front of him and he will give you full lantern oil on your meter. If you run out of Lantern Oil then you can purchase some from him any time or from various shop owners in the land.  Also you can fill up your lantern with no Fee by swinging it at a bowl of lantern oil.
