Horses can be saved from falling to their deaths from great heights by freezing them mid-air with Ice Arrows or other ice weapons. This will cause them to fall as a temporarily unbreakable solid block, preventing their deaths. Alternatively, teleporting mid-air while falling and then heading to a stable to retrieve it will bring the horse back to safety.
